3 Minute Thermomix Salad
This is the simplest and most tasty 3 minute salad you're ever going to make. Even better, you can use whatever veggies you have on hand and it turns out so well.
First, you need to raid the fridge. Find all the veggies that are sitting in there:
Carrot, broccoli, tomato, kale, cabbage, zucchini, cucumber, cauliflower, capsicum, beans, snow peas, mushrooms, beetroot, fennel. Basically anything you could eat raw (and don't be afraid to push the boundaries with broccoli, cauliflower and mushrooms!).
Add in half an apple or pear for some sweetness, and half an avocado for creaminess.
Pop in a sprig of herbs. Coriander, mint, parsley or basil. Whatever you have.
Add a spoonful of something creamy or cheesy and a pinch of salt. Any of the fermented cashew cheeses by Kehoe's or Botanical Cuisine, Feta or Goat's Cheese will work exceptionally well. A squeeze of lemon or lime too if you have it handy.
Pop it all in the Thermomix on speed 4 for 7 seconds (you can also use a food processor, or do it the old fashioned way and cut it by hand!).
Sprinkle with some toasted seeds or nuts, serve it with a slice of sourdough and enjoy!
