Choc Orange Chia Seed Cake with Choc Avocado Mousse

We LOVE birthdays and any excuse to eat cake.

This is my all time favourite wholefoods cake and with really great ingredients (almond meal, chia seed, eggs, cacao, coconut oil and rapadura sugar) it’s ALMOST healthy enough for breakfast. It’s GF and DF but it tastes so good that everyone will love it.

This is my take on a classic favourite with the addition of orange while we’re in peak season.

And the mousse…simply my favourite. Use it as the frosting and eat the rest by the spoonful. The avocadoes make it super smooth and creamy, and it doesn’t leave you feeling overindulged.

Ingredients
2 oranges, for zest and juice
4 tbsp chia seeds, soaked in 1 cup of orange juice for 15 minutes
½ cup cacao powder
½ cup coconut oil, melted
5 large eggs
125g almond meal
125g rapadura sugar (or raw sugar)
½ tsp salt
2 tsp baking powder

Method
Preheat the oven to 180 degrees.

Zest the oranges and set zest aside.

Juice the oranges. You may need a third orange depending on the size to make up 1 cup of juice.

Soak the chia seeds in the orange juice and let it sit while you prepare the rest of the cake batter. Note: if you don’t want the orange flavour, simply omit and replace with water.

Place all the ingredients, including orange zest, in a bowl and mix well.

Add the chia seed gel and mix through.

Pour the batter into a lined cake tin and bake in oven for 30-35 minutes, or until a knife comes out clean. When making a double batch (which I usually do), it usually takes 50-60 minutes to cook through.

For the Chocolate Mousse:
5 avocadoes
1 cup honey
1 cup cacao
1/3 cup water
1/2 tsp salt
1 tsp vanilla

Blend up all the mousse ingredients till it’s smooth and creamy and then just try not to eat it all in one sitting🥑💚 (you’ve been warned😆).
