Pumpkin, Pear & Coconut Soup

Pear in soup? You heard it here folks!

Pumpkin and pears are abundant through autumn so let’s become best buddies with them. 

You’ll LOVE our all time favourite Pumpkin, Pear and Coconut soup. My kids really don't like pumpkin or sweet potato any other way, but they happily gobble this down with cheesy bread for dinner. 

The Pear and Coconut add a of sweetness and depth which rounds out the flavour of the pumpkin.

The Potato adds body, and the Sweet Potato and Carrot make the Pumpkin Soup less Pumpkiny, which we prefer. We love this softer flavour of this soup with the variety of veggies, plus it helps use veggies you already have from the box.

You can of course just use the pumpkin or whatever you have - it’s such a flexible recipe.

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 1 cloves garlic, finely chopped

  • 1/4 jap pumpkin (1kg), peeled and deseeded

  • 1 potato, peeled

  • 1 sweet potato, peeled

  • 1 carrot

  • 1 pear

  • 1/2 can coconut milk

  • 250ml stock or bone broth

  • 1/2 tsp salt to taste

  • Dukkah by An Apple A Day - sprinkle to serve

  1. In a large saucepan or Thermomix, heat 1 tbsp of oil and saute the garlic and onion on medium head for 5 minutes.

  2. Roughly chop the rest of the veggies and pear. Add the veggies, pear, coconut milk, stock and salt to the pot. Simmer for 20 min, or until all veggies are tender.

  3. Blend with a stick blender or in the Thermomix until smooth.

  4. Serve with crusty bread and a sprinkling of An Apple A Day Dukkah for a delicious crunch.
