Cauliflower Rice with an Asian Twist

If you (like me) tend to neglect cauliflower, this recipe will take your tastebuds by surprise in a very good way. Meet Cauliflower Rice that's is no longer meh!

A little creativity makes this bland cousin of broccoli sing and you'll happily eat it all week like I did! It's the perfect way to use the cauliflower from your box

Ingredients:
1 head of cauliflower
1 onion
2 cloves garlic
1/2 - 1 tbsp sesame oil
1/2 tsp Conscious Flow Szechuan Pepper Seasoning
1 tbsp toasted sesame seeds (optional)
pinch of salt - season to taste

Method:
Finely chop the cauliflower, onion and garlic. (Whiz it up in a food processor or Thermomix to save some minutes).

Heat a frypan with the sesame oil. Once it's hot, add the onion and garlic, and saute on a medium heat for 5 minutes until lightly golden. 

Add in the cauliflower and saute until just tender. 

Add the Conscious Flow Szechuan Pepper Seasoning (this is like a Chinese 5 spice, but waaaay better and makes food feel like a party in your mouth!), toasted sesame seeds and a pinch of salt. (Don't be too shy with the salt - this is what will really tie it all together). 

Cook through for another minute and it's ready to serve as a side or rice replacement with your favourite curry or stirfry.
