Pulled Pork - 3 ways
Ingredients
1-2kg piece of pork shoulder
1 roughly chopped onion
3-4 cloves garlic
3 tbsp mexican seasoning
salt to taste
Method
Want to know the secret ingredient to *the tastiest* pulled pork? It’s our Mexican seasoning! It takes just 5 min to prepare the pork, then 3 hours slow cooked at 125 degrees to deliver melt in your mouth perfection.
1. Chop an onion + 3 garlic cloves and place in the bottom of an oven proof dish.
2. Place your pork in a lidded oven proof dish. Cut the pork into 3-4 pieces to allow for the flavours to penetrate. Sprinkle generously with Mexican seasoning and rub over both sides.
3. Pour in a cup of water.
4. Pop it in the oven at 125-135 degrees for 3 hours. Or use a slow cooker. Use a lower temperature if you want to leave it for longer. Check it every hour or 2, add more water as needed so you have some nice juices at the bottom and also to stop it burning.

Pulled Pork Tacos with Fennel & Apple Slaw
For the Fennel & Apple Slaw:
- finely slice some fennel, cabbage & shallots
- grate some carrot and apple
- mix together in a bowl, squeeze in the juice of a lime, a sprinkling of salt and a tablespoon of mayo.
Once the pork is cooked, serve it up with the slaw in some wraps...and enjoy!
We love corn tortillas for these, but wheat based work just as well (and they don’t require warming).
