Meatballs Served 3 Ways
INGREDIENTS
500g mince
1 finely chopped onion
1 finely chopped garlic clove
1 grated carrot or zucchini
1 tbsp Mexican or Moroccan
seasoning
1 egg (optional - helps the
meatballs bind together)
1/2 tsp salt to taste
METHOD
Mix all ingredients together, then form small balls and pan fry or BBQ them.
HANDY TIPS
Make a double or triple batch to freeze for those nights you need something even quicker!
Go the extra veggie mile Serve spaghetti + meatballs with seasonal steamed veggies (broccoli, carrot, beans, sweet corn)
OR Serve with a side salad (lettuce, tomato, cucumber, red capsicum, carrot)
Keep the Burgers and Wraps simple for the kids and give the option of veggie sticks on the side. This is still always the way my kids prefer to eat their veggies.
SPAGHETTI AND MEATBALLS
The crowd pleaser!
For the sauce:
1 finely chopped onion
1 finely chopped garlic clove
1 jar tomato passata or 2 tins chopped tomatoes or 700g fresh tomatoes.
Saute the onion and garlic, then add the tomatoes, then add the pan fried meatballs. Add another tbsp of Mexican or Moroccan seasoning for hearty, full flavour.
Let it simmer for 15 mins, then serve with spaghetti of your favourite pasta.
BURGER NIGHT
Make your meatballs a bit bigger, then flatten them into burger patties for cooking.
Serve with aaallll your favourite burger options - Onion, tomato, cucumber, carrot, beetroot, lettuce, egg, bacon & sauces.
Bun or bunless? We love slices of panfried sweet potato, zucchini, eggplant and cauli in place of a bun.

Choose your salad bits - dice, slice or grate them:

carrot
capsicum
lettuce
avocado
cheese (cheddar, feta, plant based)
