Sausage Rolls PACKED with veggies
INGREDIENTS
1 onion, finely chopped
1 clove garlic, finely chopped
1 carrot, grated
1 sweet potato, grated
1 zucchini, grated
1 red capsicum, finely chopped
1kg mince (beef or pork)
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp mixed herbs (basil, oregano, thyme work well)
METHOD
Grate or chop all the veggies finely. Saute the veggies off in a frypan on medium heat to reduce the liquid (approx 15 min). Don't skip this step (unless you want a soggy mess!).
Mix in the mince and seasonings. Using your hands gives the best result. I always like to test cook a tiny sample of the mix at this stage, to make sure the seasonings are well balanced.
Lay out your pastry. If using store bought puff pastry, slice the pastry in half down the middle. Lay some mixture down the centre of each piece of pastry and Roll them up!
My favourite homemade GF pastry recipe is in Jo Whitton's "Life Changing Food" book (Quirky Cooking), but the kids love plain old store bought puff pastry.
Brush with an egg wash and sprinkle with sesame seeds (optional).
Bake in an oven at 180 degrees for 30 min, or until golden brown.
This recipe makes a double batch - they freeze super well either cooked or uncooked (if they last that long! My kids loved them so much they ate the leftovers for breakfast).
Variation: Pork and Fennel Sausage Rolls

1 tsp salt
1 tsp fennel
1 tsp kalonji (nigella) seeds (optional)
1 tsp smokey paprika
METHOD: as above
